DEVIL'S FOOD CAKE
Easy Devil's Food Cake Recipe This is the Devil’s Food Cake that I grew up with. My mom would bake it as a loaf cake, a layer cake, a bundt-type cake, and cupcakes! It was probably the first thing that I ever baked by myself (and I’m sure I made a total mess of the kitchen when I did…sorry, Mom!). Please read the entire recipe before beginning. The baking “utensils” are what you will need to prepare the batter and bake the cake. The ingredients are listed in “groups” and then the baking instructions will be given for each group.
Utensils:
Large mixing bowl
Medium-sized bowl Sifter
Mixing spoon
Measuring cups (dry and liquid) and spoons (dry and liquid)
Electric mixer (hand-held or table; this is optional, I hand-stir the batter)
Baking pan (13x9 loaf pan, 2 round layer pans, straight-sided bundt pan (as for Angel Food cake), or cupcake papers/pans)
Ingredients Group 1:
3/4 cup SHORTENING (do not use butter, margarine, or lard)
2 cups SUGAR
Group 2:
2 EGGS (large, do not use extra large or jumbo)
Group 3:
3 cups FLOUR (regular or unbleached)
3/4 cup COCOA (baking cocoa in powder form, not bricks)
2 teaspoons BAKING SODA
1/2 teaspoon SALT
Group 4:
2 cups WHOLE MILK (do not use skim or 1%, 2% is OK)
2 teaspoons VANILLA (extract, not flavoring)
Group 5:
Pan spray (or shortening to coat baking pan)
Preparation and Baking Group 1:
Cream shortening and sugar in large mixing bowl.
Group 2:
Add eggs to creamed mixture.
Group 3:
Sift together all ingredients into medium-sized bowl.
Group 4:
Combine milk and vanilla. Add Groups 3 and 4 alternately to creamed mixture. Continue to mix until all ingredients have been used and batter is well blended. Group 5: Spray (or coat) bottom and sides of pan (unless making cupcakes, in which case insert cupcake papers into cupcake pans). Heat oven to 350*. Bake 35-40 minutes, or until the cake is done. Use a cake tester or a toothpick to test, should come out clean. It is very easy to overbake a cake---and this is the most common cause of a cake being dry. When you put the cake in the oven, set a timer for 12 minutes. When it goes off, turn the cake pan, and set timer for 12 minutes. When it goes off, check the cake for doneness. If the cake is beginning to look done around the edges, then set the timer for 5 minutes. Turn the pan and check again for doneness. As the cake nears being completely baked in the center, set the timer for 2 or 3 minutes, and be sure to remove the cake from the over the minute that cake tester/toothpick come out clean! Cool. Frost with your favorite frosting (all flavors are great on this cake!). Serve alone, with milk, or with ice cream! This cake freezes nicely. Cut into squares or slices, wrap in waxed paper, and put into freezer-type resealable bags. To thaw, remove from freezer and set out on the counter for about an hour. ENJOY!!! POPCORN BALLS
HALLOWEEN POPCORN BALLS 1/2 Cup Molasses 1/2 Cup Dark Corn Syrup 1/2 tbs. Vinegar 1 1/2 tbs. Butter 6 Cups Popped Popcorn Mix molasses, corn syrup and vinegar. Cook, stirring occasionally, until candy thermometer registers 270. Constant stirring is needed after 240. At 270, add butter, stirring just to mix, then pour syrup slowly over popcorn. Press into balls and place on waxes paper to cool. A simple prized may be placed inside each. Makes 10 balls, 2 1/2" diameter. Taken from The Delineator, circa 1926. TAFFY APPLES
TAFFY APPLES 1 cup granulated sugar 1 cup brown sugar 1/2 cup vinegar 1/2 cup water Apples, firm and red Skewers Mix ingredients and cook until candy thermometer registers 300 degrees. Insert skewer into end of each apple. Dip entire apple in syrup until well coated. Place on waxed paper to harden. Skewer is left in to hold apple when eating. Apple are merely coasted, not cooked. Batwitch
Ingredients:
• 3 cups or 12 oz of sharp Cheddar cheese, shredded • 1 8 oz container of chive and onion cream cheese that has been softened • 1 4 oz jar diced pimientos, drained • 1/2 cup chopped pecans, toasted • 24 whole wheat or pumpernickel bread slices. Substitute pumpkin bread if you dare. Directions • Stir together Cheddar, crème cheese, pimentos and pecans. • With a 3 or 4” bat-shaped cookie cutter cut two bats from each slice of bread. • Spread mixture over 24 bats evenly and top each with the remaining 24 bat slices. Yields 24 sandwiches.
Haunted Cookies
Ingredients:
• 1 lb. white chocolate • 1 pkg. Nutter Butter Peanut Bars • 1 pkg. mini chocolate chips Directions: • Melt chocolate over low heat in the top of a double boiler. • Dip each cookie into chocolate to cover thoroughly • Place covered cookie gently onto waxed paper until chocolate is cool and set. • Create eyes with mini chocolate chips. Yield depends upon the quantity of cookies in the bag.
Witch’s Brew
Ingredients
• 2 Gal orange juice, any style. • 1 liter club soda • 4-5 drops of green food coloring • 1 latex surgical glove (really) • 1 large package multi-color gummi worms Directions At least one day before the party: • Fill latex glove with water and works. • Tie open end off with a rubber band and place the glove in the freezer overnight. One hour before party: • Pour orange juice into punch bowel and add food coloring drop by drop until desired disgusting color is obtained. • Slowly add club soda • Take the latex glove from the freezer and slide it off of the frozen water/worms concoction that’s inside. • Add the frozen hand-shaped, worm-ridden ice cube to the punch bowl and let it float. Yields about 38 cups
Fresh Eyeball Appetizer
Ingredients
• 6 medium size eggs • 6 oz softened whipped cream cheese • 12 Pimento-stuffed Green Olives • Your choice o red hot sauce, ketchup, or red food coloring Directions • Hard boil, cool and peel the eggs • Cut each egg in widthwise. Remove and discard yolk • Place an olive, pimento-side up, into each cavity and surround with cream cheese. • Dip the tip of a tooth pick into what ever red substance you choose and draw red blood vessels into the cream cheese. Yields 12 eyeballs
Rotten Apples
Ingredients
• 6 large golden delicious apples • 1/2 cup raisins • 1/2 cup pecans or walnuts, chopped • 1/2 cup firmly packed brown sugar • 1/4 cup water • 4 tablespoons butter • 1/2 teaspoon ground cinnamon • 1/4 teaspoon ground nutmeg • 6 gummi worms Directions • Pre heat oven to 350° • Mix raisins and pecans together in a bowl • Core apples from bottom end. • Stuff apple with raisin and pecan mixture • Place apples in a lightly buttered baking dish with stem side up • In a saucepan mix brown sugar, water, butter, cinnamon & nutmeg • Cook over high heat stirring constantly mixture comes to a boil • Carefully pour mixture around apples • Bake uncovered for approx 30 to 35 minutes or until skins start to crack and apples are tender when pierced with a toothpick. Baste occasionally with syrup mixture while cooking. • Remove apples from oven and let cool to room temperature • Place each apple into a small bowl and spoon syrup mixture around each one. • Cut a small hole near the top of each apple and poke in one end of the gummi worm. Let most of the worm hand out of the apple. Yields 6 apples There’s lot more treats that you can make. All you need is a little bit of time and some imagination.
